Carotenoids are pigments found in various types of fruits and vegetables that provide yellow, orange, red colors. This study aimed to extract yellow pumpkin skin using edible oil solvents. The extraction process was carried out ultrasound-assisted (UAE) method with virgin coconut (VCO) palm kernel (PKO). Yellow peel powder sizes 40 mesh 100 were extracted variations time (30 minutes, 60 90 minutes) solid-to-solvent ratio (1:10, 1:20, 1:30, 1:40, 1:50). UV-Vis spectrophotometer analysis used determine the concentration results. According research results, best carotenoid 2513.44 ppm obtained PKO solvent a size mesh, 30 powder-to-solvent 1:10.
